IOU/Dice is already a metric in fastai. Look it up

How can I modify it so that it can be applied in camvid semantic segmentation?

IoU should be Jaccard (for binary segmentation problems). For multiclass segmentation problems there is DiceMulti already implemented in Fast.ai, but I don’t know if it’s equivalent to mIoU (probably not). Anyone that can help to clarify this point?
